From Women̵7;s Health
My name is Kimberly Vargas (@ kimmmie.k) and I’m 23 years old. I live in New Mexico and I work as an office manager for my father’s trucking company. By following the keto diet, exercising at least five times per week and thanks to your personal trainer, I have lost about 70 pounds.
I’ve been a “older” girl for most of my life and it was a struggle to get the log as I can remember. I have tried to lose weight many times in the past, but always find myself gaining again.
Finding clothes (especially jeans) that suit me and my style was the hardest part of my previous weight. Another struggle for me is to be scared to ride a horse in an amusement park or water park because of my weight. My relationship with weight loss in the past was an emotional roller coaster.
My turning point came when I got on the scale and it was worth 302 pounds.
I always told myself I would never weigh more than 300 pounds, until I did in February 2020. I thought, That’s not right, let me try again, and I’m disappointed, the scale is correct.
I feel like I’ve hit the bottom. That day, I decided to change. I will become healthier, happier and stronger. I want to make my family, my husband and especially my deceased grandmother proud. I want to change for my self, and I have started my journey.
I started my fitness journey by doing exercise videos at home, then went to the gym and asked my personal trainer.
To exercise, I started by doing home fat-burning workout videos for beginners called Daniel Bartlett’s. Body Project. After two months of exercising at home and changing my eating habits, I’ve seen the results! The training started getting easier for me and I know I have more ability than that.
Given my size, I know I’ve always been underestimated (and not too quiet at times), so the idea of going to the gym frightened me. But in the end I found the courage to say, “Twisted it!” And I went to a gym for three months on my journey.
I started to feel more comfortable going to the gym, and I feel good to know that I have finally taken a step further and done something positive for myself.
I saw a personal trainer, whom I still work with, named Israel Martinez, the owner of IM Fitness Gym. I was relieved to learn that I finally got a fitness expert to guide me through my workout. I’ve got someone to push me and keep me motivated.
Now, I practice five times a week, sometimes twice a day. I make sure to run, walk, jog or at least three miles per day. My gym day includes a variety of exercises planned by my coach. I work out for the upper body and lower body and do different cardio and weightlifting exercises.
A lot of my weight loss success has also come from going on a keto diet.
The first nutritional change I made was to increase my water intake. I drink a lot of water during the day, and only when I think I’ve had enough, do I drink more. My goal is to drink at least 100 ounces of water per day.
Then I started cutting back on carbs, carbs, and sugars – and realized that this is similar to the keto diet. I did more research on keto and decided to give it a try. That being said, I know I have to be patient and not be discouraged by not seeing immediate results.
After going on the diet for about three weeks, I started noticing small changes. I started to see my skin, digestion and energy levels improve. I have tried all the different ways to lose weight when it comes to diet. But when I started taking keto, my late night snacking and sugar cravings and snacks all disappeared. It worked!
I no longer crave sugar or carbs. It’s a lifestyle change that is changing the way I feel. I no longer have a lack of energy throughout the day. I feel a sharper mind and a better memory. I am finally satisfied with my meal.
This is what I usually eat for a day.
Lunch: Two butter-covered eggs, some bacon, and a waffle (cheese waffle). Other days, I’ll make tuna salad or shrimp lettuce roll.
Dinner: Chicken wings (with bones of course) is my favorite. I usually choose a protein and add veggies like broccoli, asparagus, squash, zucchini or cauliflower rice on the side.
Snacks: Almond, shredded cheese, pork, beef jerky and if I crave something sweet, try Two Good yogurt, berries or strawberries.
After losing 70 pounds, I feel better than ever – mentally and physically.
Losing 70 pounds was a huge achievement for me. Even simple tasks like tying my shoelaces became easier. Mentally, I feel more confident, comfortable and more receptive to life.
Losing weight isn’t essential, but it’s what I really want for myself. I know I’m doing something right when I realize things are getting easier for me physically and mentally, such as no longer needing an expansion belt when flying a plane or finding that a The medium-sized towel finally fits my body. That is a great feeling.
Now, I like to create content that inspires others to live their best lives.
In the end I was in control and I didn’t let anything hold me back or prevent me from being the best version of myself. I’ve used my platforms on TikTok, Instagram, and YouTube to help others live their best lives through the beauty, lifestyle, and cooking content I create.
My goal is to spread positivity and good energy. I hope to inspire and encourage others to demonstrate that losing weight and becoming healthier is achievable. Not easy, but not impossible.
